Olive collection is done manually by experienced olive tree farmers. Olives are handpicked and selected just when they are ready to ensure the highest quality product. Then olives are transported in suitable plastic crates for olives with holes for ventilation.
Under a contract with a new extraction plant, our olives are processed no longer than 48 hours after collection. During this period our olives are stored indoors. Then, our Extra Virgin Olive Oil is cold pressed.
Ongoing decanting is applied for a natural cleaning of the olives.
Olive oil is free from chemical fertillezers and pesticides
Hints
1- Extra vigin olive oil it made into oil when it is younger and not as ripe, therefore it should have a greener colour to it. anything too yellow probably isn't fresh. Pure olive oil is pressed when it is ripe and, therefore has a yellower colour.
2- Look for bottles that say cold press on the label. If its not cold-pressed, the heat from the extraction process changes the chemistry and quality of the olive oil.
